“Lyon is the capital of French cuisine,” she says, “and the people there who founded French cuisine were called ‘les mères’ — the mothers.”

One of the trailblazers of French cuisine, Eugénie Brazier, was known as “la Mère Brazier” (1895 – 1977). “She was an unwed mother, which was very taboo at that time,” Cathy explains, “yet she became the first person to have two restaurants receive the three Michelin stars rating. The next person to achieve was a man, 60 years later — and of course, she trained so many of those male chefs! It’s truly an amazing story.”

Recipe: Chocolate Mousse – Avocado Surprise

“Who says you can’t have dessert first?” asks Cathy. “Inspired by Les Mères de Lyon, here’s a delicious mousse with a twist. Don’t tell your guests what the main ingredient is. Leave them guessing. The velvety creaminess of this mousse is lovely, and when they learn it’s avocado, they’ll be pleasantly surprised. For beautiful presentation, serve it with some plant-based whipped cream. This one’s a real crowd-pleaser and can be made in a flash!”

FLAVOURS: The surprising creamy texture and rich chocolate flavour is offset by the naturally sweet taste of fresh raspberries.

BENEFITS: This healthy mousse is 50% lower in calories and saturated fat and has no cholesterol. The raspberries add vitamin C, fibre, and even manganese, which regulates blood sugar and lowers inflammation. The other ingredient to mention is red maca. In addition to its many nutrients, it is said to improve sex drive, fertility, and mood. Oh là là! Now we’re talking “Flavour with Benefits!”

Yield: 1 cup, 2 servings
Total Time: 15 minutes
Equipment: Food processor, spatula, and piping bag with tip

Ingredients:
• 2 ripe avocados (265 g)
• ½ cup (50 g) unsweetened natural cocoa
• 2 tbsp (17 g) toasted carob powder
• 1 tsp monk fruit or 1 cup (120 g) icing sugar, ¼ cup (34 g) date sugar, or ¼ cup (63 g) white sugar
• 2 tsp red maca powder
• ½ cup (63 g) fresh raspberries (for garnish when serving)
• coconut whipped cream

Directions:
• Place all ingredients (up to the maca powder) in a food processor and blend until smooth.
• Taste for sweetness and adjust as needed with additional date (or refined) sugar.
• Pipe onto dishes or scoop out with a spoon.
• Garnish with raspberries and coconut whipped cream.
